Holiday season brings renewed focus on food safety in restaurants
MOBILE, Ala. — As the holiday season approaches, food service inspectors with the Mobile County Health Department are reminding local restaurants and foodservice workers that foodborne illness prevention is more critical than ever. Increased business, special menus, and gatherings mean kitchens are busier, and the risk of unsafe practices grows.
“With higher volumes and seasonal pressures, it’s essential that every staff member upholds rigorous standards,” said Brad Philips, who oversees MCHD’s Inspection Services team. “Most violations we see — especially during the holidays — stem from skipping basic steps like handwashing, failing to cook foods to correct temperatures, and not cleaning prep areas thoroughly.”
Here are some key reminders for restaurants and food handlers:
• Maintain strict hand hygiene and use gloves or utensils to handle ready-to-eat foods.
• Use a food thermometer to ensure all proteins reach safe internal temperatures—never guess “doneness” by look or feel alone.
• Clean and sanitize all utensils and food-contact surfaces before, during, and after prep.
• Never allow ill employees to prepare or serve food. Managers are required by law to exclude sick workers until they are healthy.
• Document cleaning schedules, temperature checks, and employee training—these records are as important as physical inspections in 2025.
Restaurant teams that stay vigilant can help prevent outbreaks, protect customers, and avoid costly citations or closures. “Excellent food safety is the single most important thing restaurants can offer — especially now,” said Dr. Kevin Michaels, Health Officer for Mobile County.
